Cinnamon “sticks” are from the same tree family as cinnamon cassia quills. Cinnamon “sticks” are the dried bark of an evergreen tree – the bark curls inward like a thin cigar (when it dries) rather than “rolling” like cinnamon cassia quills. Cinnamon sticks have a sweet, floral aroma and are less pungent than cassia quills. Cinnamon sticks are lighter in color and more brittle than cassia quills. Both Cassia and Cinnamon Sticks are usually used interchangeably in recipes – depending on your preference.
